Three more from the kitchen
No flour, no refined sugar, nothing off the long list on the back of a bag. Three things you can name, and an oven or a freezer. The potato bread is on the front page; these are the three I make most after it.

1 Chickpea cookies
- a tin of chickpeas, drained
- two spoons of peanut butter
- a spoon of honey, a drop of vanilla
- half a teaspoon of baking powder, a handful of dark chocolate chips
How blend everything but the chocolate until smooth, stir the chips in, scoop onto baking paper, bake until set.
A cookie with no flour in it and no sugar beyond the honey. The chickpeas bring the protein and the fibre, so it sits in you like food rather than a sweet, and you stop at two instead of six.
2 Sweet potato chocolate ice cream
- a boiled sweet potato, cooled
- a cup of milk
- a spoon of raw honey
- two spoons of cocoa
How blend until smooth, into the freezer for two hours, stir every half hour so it stays soft.
Chocolate ice cream where the body of it is a vegetable. Nobody tastes the sweet potato: it gives the sweetness and the thickness, and a cooked-and-cooled potato feeds the bacteria in your gut on the way through.
3 Blueberry chia jam
- a cup of blueberries
- a spoon of chia seeds
- a squeeze of lemon
- a spoon of honey
How warm the blueberries in a pan until they burst, stir in the chia, lemon and honey, ten minutes, then the fridge. It sets on its own.
Jam is normally half sugar; that is what makes it keep. This one keeps a week in the fridge, which is as long as it lasts anyway, and the whole of it is the fruit.
